Having enjoyed sushi in both the Netherlands and Japan, it became evident to me that the quality of sushi in Japan far surpassed what I had experienced elsewhere.

In the Netherlands, my sushi adventures often led me to all-you-can-eat sushi restaurants, where quantity took precedence over quality. However, my perception shifted dramatically upon visiting Japan and indulging in sushi from various cities like Tokyo, Osaka, Kyoto and Kanazawa. Whether it was from a renowned establishment or even my local supermarket Yoshizuya, Japanese sushi consistently exceeded my expectations.

But everything changed for me yesterday.

I had the privilege of dining at Sushi Watanabe, where Chef Watanabe personally crafted Ezomae sushi right before my eyes. Witnessing a master chef meticulously prepare and serve sushi in front of me was an entirely different experience. The attention to detail and the flavors surpassed anything I had imagined.

Words alone cannot capture the essence of this experience. Savoring counter sushi from a master sushi chef transcends mere foodโ€”it’s an unparalleled culinary journey that defies description. Even the photos I share fail to convey the true depth of flavor and craftsmanship. You might glance at them and assume it’s just like any other sushi, but you’d be mistaken. I certainly was, initially thinking all sushi was relatively similar.

Now, I find myself spoiled by this extraordinary experience, wondering if I’ll ever be able to enjoy sushi as profoundly unless it’s crafted by a master sushi chef.
