Also known as burdock root, gobo is a long, slender root vegetable with a crunchy texture and earthy flavor. It’s a versatile ingredient often featured in stir-fries, soups, and pickles.

One of my favorite ways to enjoy gobo is through “Kinpira Gobo” (金平牛蒑), a popular Japanese side dish.

Thinly sliced gobo and carrots are stir-fried together with soy sauce, mirin (sweet rice wine), sugar, and sesame seeds.

The name “Kinpira” refers to the cooking method of stir-frying ingredients with soy sauce and sugar until glazed and flavorful.

This nutritious and flavorful dish is commonly served as a side dish or as a topping for rice.

Kinpira Gobo holds a special place in my heart as my mother-in-law frequently prepares it. Paired with a bowl of Japanese white rice, it’s a comforting and satisfying vegetable dish.
